Berkel B2, the compact manual flywheel slicer faithful to tradition. The vintage meat slicer, manufactured the traditional way, remains a jewel of the past. A precious and elegant furnish. The pride of gourmet connoisseurs. Its structure is not too heavy, making it ideal for a professional but not intensive use.
B2 has a blade with a 265 mm diameter. It is available in 3 standard colours: red, black, and cream, or in a wide range of custom colours. Its accessories include the pedestal and flower flywheel, which makes it even more precious.

The blade
Flywheel B2 has a 100cr6 steel blade with a 265 mm diameter and a 150 mm round cutting capacity. It allows for a slice thickness that ranges between 0 and 2 mm. The concave shape of the blade touches the product only at the cutting point, thereby preventing any alteration in taste and scent.

Built-in sharpener
The B2 flywheel slicers have a built-in blade sharpener. You can position the sharpener manually simply by lifting and rotating it. The sharpener has only one position, which ensures the perfect angle for optimal sharpness.

Blade protection device
Flywheel B2 is equipped with a protection device that covers the blade to ensure minimum safety requirements while using or cleaning the machine.

Waste collection drawer
This machine has a drawer to collect the waste produced while slicing. Another measure that makes this machine even easier to use and clean.

Anodised aluminium meat table
The B2 flywheel slicers are equipped with an anodised aluminium meat table, which ensures durability and wear-resistance.

 

Poche aziende al mondo hanno inventato il prodotto che vendono, ancora meno quelle che portano il nome dell’inventore: Berkel è tra quelle. Per anni il giovane olandese Wilhelmus Adrianus Van Berkel cercò di coniugare il suo mestiere di macellaio e la sua passione per la meccanica. Ci vollero mesi di esperimenti ma alla fine la sua pazienza venne premiata e dopo lunghi tentativi riuscì a mettere insieme due idee semplici ma geniali: una lama concava, in grado di riprodurre con precisione il movimento mano/coltello, e un piatto mobile capace di scorrere verso la lama. Nacque così l’affettatrice. Van Berkel non possedeva però i mezzi necessari per passare alla produzione della sua macchina. Scoprì dunque una tipografia che si trovava in condizioni fallimentari. Si presentò al proprietario e propose di trasformare la tipografia in un laboratorio per la fabbricazione delle sue affettatrici. Fu così che il 12 ottobre 1898, Van Berkel fondò a Rotterdam la prima fabbrica di affettatrici del mondo. Grazie allo spirito innovativo di Van Berkel, il primo anno di attività della Van Berkel’s Patent Company Ltd si chiuse con la consegna di 84 affettatrici. Dopo il 1945 Berkel potenziò la propria rete distributiva e commerciale conquistando definitivamente il mercato mondiale: nacquero fabbriche e filiali in Italia, Inghilterra, Olanda, Portogallo, Spagna, Belgio, Svizzera, Danimarca, Norvegia, Svezia, Francia, Stati Uniti, Canada, Argentina, Messico. Nacque così il mito.
